Bistronomy

Bistronomy is one of Slovakia’s most highly awarded restaurants. For 2026, it received 3 toques from Gault&Millau, placing it among the country’s top restaurants, while the prestigious Austrian guide Falstaff awarded it 94/100 points and 3 forks.

What to expect

The menu changes regularly according to the season and showcases ingredients from carefully selected local farmers, fishermen, foragers and artisan producers.

Guests can watch the chefs at work in the open kitchen, creating a more interactive dining experience. The cuisine highlights organic vegetables, freshwater fish, free-range eggs, wild mushrooms, venison and premium meats sourced from responsible producers.

The restaurant also offers carefully curated tasting experiences accompanied by professional wine recommendations.

Wine experience

Wine is a central part of the Bistronomy concept. Sommelier Matej Demčák has curated a list of nearly 200 wines, featuring small Slovak producers alongside renowned international wine regions.

The selection includes:

The internationally respected Star Wine List awarded Bistronomy two Silver Stars, recognizing the quality of its wine programme.

Bistronomy is located in Vydrica, one of Bratislava’s newest waterfront neighbourhoods, at the foot of Bratislava Castle and within walking distance of the historic Old Town and the Danube promenade.
